Monday-beef stroganoff

Tuesday-chicken sandwiches

Wednesday-meatloaf

Thursday-Caitlyns sweet and spicy chicken (freezer meal)

Friday-homemade pizza

Saturday-soup in crock- chili and cornbread

Sunday-chicken tortilla casserole

Recipe-

Chicken Tortilla Casserole

about a pound of shredded chicken (I like thighs usually but have breasts on hand for this week)

corn tortillas cut into strips

2 cans cream mushroom soup

1 jar LaVictoria green sauce (tall skinny bottle in mexican cooking section)

1/2 c. milk

1 onion, chopped

shredded cheese

In saucepan combine soup, green sauce, milk and onion and heat and stir to combine.  Then layer the sauce, chicken and tortillas lasgna style starting and ending with sauce.  Top with cheese.  Bake covered with foil for about 40 mins at 350 then uncover for 10 mins to brown the cheese.  A family favorite!

These are super easy and a copy cat recipe from a restaurant chef that I watched cook it years ago.

Chicken breasts pounded to even/flatten out

ranch dressing

buns

toppings like mayo, lettuce, tomato…

Dredge the chicken through the dressing and cook on a flat griddle thingy or in a large skillet sprayed with cooking spray.

Serve on buns with desired toppings.
