Bamboo Sprouts

Menu Monday 2/11

I have been sickly for 2 weeks straight now!  It started with Levi, moved on to Bella and then Sophie so they have had it and been (mostly) over it but me…I can’t shake it.  Its wearing me down now.   I am tired, bored and boring.  So there you have it.

I am making this a pretty easy week of meals.

Monday- Rick returns from his business trip and he usually takes us out for dinner when he gets home.

Tuesday-Rose’s enchiladas from the freezer exchange thingy

Wednesday- Salmon dinner to celebrate my Dad’s birthday.  And chocolate cake of course.

Thursday- leftovers

Friday- homemade pizza

Saturday-Jennifer’s pineapple chicken from the freezer exchange thingy, served with sticky rice and salad

Sunday- Autumn soup in bread bowls

For more meal ideas go check out The Organizing Junkie.  She is also hosting a kitchen challenge for the month of Feb I think.  I actually did mine in one of the 2 bursts of energy I have had in the past couple of weeks and it feels so good to have pared down, organized cupboards.  :)

  1. So sorry to hear you have been sick. NO fun to be sick/ no energy/ and 3 little ones that need your energy. Hope you feel better soon. I had something here on the East side of the US that seemed to last about 21/2 wks. I thought I’d never feel back to normal! Get well soon!

  4. I hope you get to feeling better soon. My family has all been sick, as well as at work. So it keeps getting passed around to one another.

On the flip side, your menu sounds delish!

  5. I know it sucks to be sick! It’s great that you exchanged those freezer meals. They come in really handy when you aren’t feeling great, and they sound really tasty, too.

  6. Feel better Tiffany!! No fun with 3 little cutie pies needing their healthy momma. Ugh…I sure can relate…this year is a real sickly one for me & I never get sick! Hope you are back to feeling wonderful & full of energy very soon!

  9. Hope by now you are feeling better. Mommies never really get any sick time.
How wonderful that you have a couple of meals in the freezer already prepared. The freezer exchange “thingy” sounds great!
