Menu Monday 10/1

Well we skipped around a lot last week and missed some dinners all together so some of this will look a lot like last weeks plan!  Also, we recently stocked up on about 20 pounds of ground beef as the store had the best in store sale on it ever.  96% lean for 2.25 a pound!  So we will be eating lots of GB for a while.  :)

Monday- Bacon Lasagna (recipe posted last week), mixed veggies and garlic bread

Tuesday- GG’s Chicken Enchiladas (also posted last week) and salad and jello for dessert

Wednesday-leftover enchiladas or lasagna and bake cookies

Thursday- crockpot chicken and rice and green beans

Friday- Kids and Daddy on their own because mommy is going to a scrapbook RETREAT!  WOOHOO  I think they should have something with ground beef but bet they will end up going OUT instead.  LOL

Saturday- crockpot roast, potatoes and carrots (I will prepare before I leave and put in fridge and Rick can put in crockpot and flip the switch)

Sunday- french dips with left over roast and sweet potato fries when mommy comes home from retreat

What’s baking? Pumpkin cookies

Pumpkin Cookies:

1 beaten egg, 3/4 c. canned pumpkin, 1/3 c brown sugar, 1 T oil, 1t vanilla- still all together in medium bowl.

In small bowl stir together- 3/4c. flour, 1t pumpkin pie spice, 1/4 t baking soda, 1/8t salt. 

Add dry ingreds to wet ones and mix.  Add raisins (or chocolate chips which is what I do YUM) and stir.

Bake 350 12-14 mins.  Makes 24 SMALL cookies.  LOL  These are a soft cakey cookie and are my favorite.  I dont know that it makes 24 for me though so I usually double this.  :)   If you can get it to make 24, they are only 42 cals each cookie by the way.

  2. so jealous that you have the forsight to plan a menu a week ahead! We are going to try this…Mike is completely on board, we used to cook loads of different things before Piper, now I open the cupboard and stare inside with a panic’d expression every night at 5pm!

    Like Hayley, I too am impressed by your planning!
    I head out to the store EVERY morning with Kiara & browse the oh-so-cramped aisles her & try to figure out what’s for dinner. I think we wind up having the same old 3 meals ALL THE TIME! lol!
    It’s just way too tempting to go out around here!
    I am going to try your chili recipe though! :)

  7. I made the cookies too! I think I got 19 out of the batch (I never get the number the recipe gives!). Anyway, it’s good I didn’t double the recipe because they are so delicious that I might have eaten them all today! Great texture. Thanks for sharing that!!

  10. You have some terrific recipes for this week. I really enjoy baking. I plan on making an apple pie this weekend. It’s a diabetic recipe but you’re not missing any flavor.
