Menu Monday 9/10
So here is the plan for the week. The weeks I write it all out like this, we eat out less which saves us both $$ and calories.
Some friends have asked for recipes too so I am including a few below.
Monday- meatloaf, mashers and peas
meatloaf-
2lbs ground beef, 2 eggs, 1 onion chopped up, 1 c. V8 juice, 1t salt, 1 box of stove top stuffing
Beat eggs, add v8, salt, onion and the packet of seasoning from the stove top. Add beef and mix well. Add bread crumbs from the stuffing mix. I bake it in a loaf pan although the recipe suggests a 9×9 greased baking dish. Spread small amount of ketchup on top if desired. 350 for 40 mins or until done (i bake it longer since its in the loaf pan)
Tuesday- salmon, veggies, rice and salad
Wednesday- (crockpot) brisket sandwiches, sweet potato fries and apple sauce
Brisket is so easy! Just buy a flat cut brisket, pop it in a crock pot, add a bottle of any BBQ sauce and cook on low 10 hours. Shred with fork and serve on rolls. Yum.
Thursday- potato soup and ham steak
This is a delicious potato soup recipe and very low cal too at 149/serving!
I double this because its good the next day for lunch too but the recipe calls for: 1 lb potatoes peeled and cut up, 1 c. water, 1 chopped onion, 2 T chopped celery, 1 t instant chicken bouillon granules, 1/4 c. nonfat dry milk powder, 2 T flour, 1/8 t pepper, 2 c skim milk.
In large sauce pan combine potatoes, water, onion, celery and bouillon. Bring to boil and reduce heat. Cover and simmer 20 mins or until potatoes are tender. Mash slightly (dont drain them!). In a small mixing bowl, combine dry milk, flour and pepper. Gradually add the skim milk, stirring until smooth. stir the milk/flour mixture into the potato mixture. Cook and stir until thick and bubbly plus one minute more. YUM. You would not know this is low cal!
Friday- home-made pizza and salad
Now sometimes I cheat and use Rhodes brand frozen bread dough in which case I you just set out the loaf and let it thaw and rise (takes about 6 hrs) and then roll it out into pizza dough. But otherwise, this is my moms delish dough recipe. Its a very easy and quick dinner.
Moms Pizza Crust-
1 pkg rapid rise yeast, 1t sugar, 1 c warm water. Dissolve yeast in water and 1t sugar. It will take about 5 mins to activate.
In the meantime, mix 2 1/2 c flour, 1t sugar and 1/2 t salt. Make well in center and add the yeast mixture and 2 T oil and mix it all up with your hands. Cover and let rise for about 20 mins.
Grease pizza pan and spread dough and make your fav pizza. bake at 425 for about 20 mins. I usually make 2 batches one for breadsticks and one for pizza but this doesnt double well so you have to do 2 seperate batches.
Saturday- roast, carrots, potatoes
Sunday- French dips with left over roast
Whats baking? zuccini bread and maybe some cookies
We almost always eat out at least once a week though so something will get bumped or used as a lunch meal on the weekend.
