Menu Monday

Monday-chicken fingers, mashers, cooked baby carrots

Tuesday-chicken enchiladas, salad

Wednesday-ballet which means fast food

Thursday-potato skins and salad

Friday-chicken pot pie

Saturday-chicken soup and bread

Sunday-spaghetti, green beans, garlic bread

Lots of chicken this week.  Oh well.  LOL

 

My Mother In Law’s Enchilada Recipe (super yum)

2 c. shredded cooked chicken

8 oz cream cheese

1 diced onion

1/2 c. milk

enchilada sauce (i use green medium)

corn tortillas

cheese

mix chicken, cream cheese, onion and milk for the filling.  Put a spoon of enchilada sauce down the middle of a tortilla, a spoon of filling and roll it up.  Place it seam side down in 9×11 pan that you have sprayed and put a thin layer of ench sauce in the bottom of.  Fill the pan with these rolls, dump rest of ench sauce on top, making sure all are covered so they dont get dry.  Bake 40 mins at 350, add layer of cheese and bake for another 10 mins.

    Tonight we had chili mac (and I made the meat separately b/c I am not a big meat fan but my kids are) and tomorrow…well who knows. Maybe Chicken enchiladas…cause that sounds good!

  3. LOL… I was scanning through your menu looking for the recipe that went with the photo…All the time thinking, MAN, that looks soo good!! I need to make that! When I noticed it was your thanksgiving supper!! LOL too funny!
    We’re having dry garlic spare ribs with rice and Chocolate cookies that are baking in the (bummer) oven right now!
